Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
In a mixing bowl, combine cooked beef, corn, black beans, and salsa.
Spread the beef mixture evenly in a baking dish.
Prepare cornbread mix according to package instructions and spread over the beef mixture.
Bake in preheated oven for 30 minutes, or until cornbread is golden brown.
Sprinkle shredded cheddar cheese on top and bake for an additional 5 minutes, or until cheese is melted.
Let cool for a few minutes before serving.
Notes:
Feel free to add jalapeños for extra spice!
