Instructions:
Preheat your oven to 350°F (175°C).
In a frying pan, cook the bacon until crispy. Remove and crumble.
In a large bowl, mix together the sliced squash, crumbled bacon, shredded cheddar cheese, sour cream, salt, and black pepper.
Transfer the mixture to a baking dish and top with bread crumbs.
Bake in the preheated oven for 45 minutes, or until the top is golden brown and the squash is tender.
Notes:
Feel free to add other veggies like bell peppers or onions for extra flavor.
