Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine couscous and vegetable broth. Let it sit for 5 minutes.
Add chopped vegetables, shredded cheese, salt, and pepper to the couscous mixture. Stir well.
Transfer the mixture to a baking dish and spread it evenly.
Bake in the preheated oven for 25-30 minutes, until the top is golden brown.
Remove from the oven and let it cool for a few minutes before serving.
