Ingredients:  

Main Ingredients

  • 1 cup couscous
  • 2 cups vegetable broth
  • 1 cup chopped vegetables (bell peppers, zucchini, etc.)
  • 1 cup shredded cheese
  • 1 tsp salt
  • 1 tsp pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine couscous and vegetable broth. Let it sit for 5 minutes.
  • Add chopped vegetables, shredded cheese, salt, and pepper to the couscous mixture. Stir well.
  • Transfer the mixture to a baking dish and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, until the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

Feel free to add your favorite vegetables or protein to this casserole for a complete meal.
