Ingredients:

  • 4 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine mashed potatoes, 3/4 cup of cheddar cheese, sour cream, milk, butter, salt, and pepper. Mix well.
  • Transfer the mixture to a greased baking dish. Sprinkle the remaining 1/4 cup of cheddar cheese on top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just add a few extra minutes to the baking time if baking from cold.
