Instructions:
Preheat your oven to 375°F (190°C).
In a large bowl, combine mashed potatoes, 3/4 cup of cheddar cheese, sour cream, milk, butter, salt, and pepper. Mix well.
Transfer the mixture to a greased baking dish. Sprinkle the remaining 1/4 cup of cheddar cheese on top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just add a few extra minutes to the baking time if baking from cold.
