Instructions:
Preheat oven to 375°F (190°C).
Cook quinoa according to package instructions.
In a mixing bowl, combine cooked quinoa, butternut squash, shredded cheese, milk, salt, and pepper.
Transfer mixture to a baking dish greased with olive oil.
Bake for 40 minutes or until the top is golden brown and the squash is tender.
Let it cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like spinach or kale for extra nutrition.
