Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups butternut squash peeled and cubed
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup milk
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Cook quinoa according to package instructions.
  • In a mixing bowl, combine cooked quinoa, butternut squash, shredded cheese, milk, salt, and pepper.
  • Transfer mixture to a baking dish greased with olive oil.
  • Bake for 40 minutes or until the top is golden brown and the squash is tender.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like spinach or kale for extra nutrition.
