Ingredients:  

Main Ingredients

  • 2 cups shredded zucchini
  • 1 cup Bisquick mix
  • 1/2 cup chopped onion
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup vegetable oil
  • 4 eggs beaten
  • 2 tsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine all ingredients until well mixed.
  • Pour mixture into a greased baking dish.
  • Bake for 45 minutes or until golden brown and set in the middle.
  • Let cool for a few minutes before serving.

Notes:

Great for a quick and easy dinner. Can be served warm or at room temperature.
