Ingredients:

  • 2 cups Butternut Squash, cubed
  • 1 cup Chopped Onions
  • 2 cloves Garlic, minced
  • 1 cup Coconut Milk
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Bread Crumbs

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the butternut squash, chopped onions, and minced garlic.
  • Add the coconut milk, olive oil, salt, and black pepper. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the bread crumbs evenly over the top.
  • Bake in the preheated oven for 45 minutes, or until the squash is tender and the top is golden brown.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for a cozy dinner. You can also add other veggies like zucchini or bell peppers.
