Instructions:
Preheat your oven to 375°F (190°C).
Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
Drain the potatoes and return them to the pot. Mash with almond milk, vegan butter, garlic, salt, and pepper until smooth.
Transfer the mashed potatoes to a baking dish and smooth the top. Sprinkle with breadcrumbs.
Bake for 20 minutes, or until the top is golden and crispy.
Let cool for a few minutes before serving.
Notes:
Feel free to add your favorite herbs or spices to the mashed potatoes for extra flavor.
