Ingredients:  

Main Ingredients

  • 2 lbs Potatoes peeled and chopped
  • 1 cup Unsweetened Almond Milk
  • 1/4 cup Vegan Butter melted
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Breadcrumbs for topping

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Mash with almond milk, vegan butter, garlic, salt, and pepper until smooth.
  • Transfer the mashed potatoes to a baking dish and smooth the top. Sprinkle with breadcrumbs.
  • Bake for 20 minutes, or until the top is golden and crispy.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add your favorite herbs or spices to the mashed potatoes for extra flavor.
