Salt and Pepper
Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground turkey until browned.
Add the shredded zucchini, cumin, chili powder, garlic powder, onion powder, salt, and pepper to the skillet. Cook for another 5 minutes.
In a baking dish, spread a layer of enchilada sauce on the bottom.
Layer the turkey and zucchini mixture over the sauce.
Top with shredded cheese and the remaining enchilada sauce.
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
