Ingredients:  

Main Ingredients

  • 1 lb Ground Turkey
  • 2 cups Zucchini, shredded
  • 1 cup Enchilada Sauce
  • 1 cup Shredded Cheese
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground turkey until browned.
  • Add the shredded zucchini, cumin, chili powder, garlic powder, onion powder, salt, and pepper to the skillet. Cook for another 5 minutes.
  • In a baking dish, spread a layer of enchilada sauce on the bottom.
  • Layer the turkey and zucchini mixture over the sauce.
  • Top with shredded cheese and the remaining enchilada sauce.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
