Ingredients:  

Main Ingredients

  • 1 cup uncooked rice white or brown
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 10 ounces fresh spinach roughly chopped
  • 1 cup feta cheese crumbled
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions: 

  • 1. Preheat your oven to 350°F (175°C).
  • 2. Cook the rice according to package instructions using the water.
  • 3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  • 4. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes.
  • 5. In a large mixing bowl, combine the cooked rice, sautéed vegetables, crumbled feta cheese, salt, and black pepper. Mix well.
  • 6. Transfer the mixture to a greased baking dish and spread it out evenly.
  • 7. Bake in the preheated oven for 20-25 minutes, until the top is slightly golden and the casserole is heated through.
  • 8. Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
