black beans

cheddar or your choice

to taste
salt and pepper
Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the quinoa and vegetable broth. Let it sit for about 5 minutes.
Add the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper to the quinoa mixture. Stir well.
Transfer the mixture to a baking dish and spread it out evenly.
Sprinkle the shredded cheese on top.
Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
Notes:
You can add more veggies like bell peppers or spinach for extra nutrition.
