Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels frozen or fresh
  • 1 cup diced tomatoes canned or fresh
  • 1 cup shredded cheese cheddar or your choice
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the quinoa and vegetable broth. Let it sit for about 5 minutes.
  • Add the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper to the quinoa mixture. Stir well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheese on top.
  • Bake in the preheated oven for 25-30 minutes, until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add more veggies like bell peppers or spinach for extra nutrition.
