Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine potatoes, mushrooms, onion, olive oil, salt, and pepper.
Transfer the mixture to a baking dish and spread it out evenly.
Bake in the preheated oven for 35 minutes.
Sprinkle shredded cheddar cheese on top and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
