Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine millet, vegetable broth, chopped vegetables, salt, and pepper.
Transfer the mixture to a baking dish and cover with foil.
Bake for 30 minutes, then remove the foil and sprinkle shredded cheese on top.
Bake for an additional 15 minutes, or until the cheese is melted and golden brown.
Let it cool for a few minutes before serving.
