Ingredients:  

Main Ingredients

  • 1 cup millet
  • 2 cups vegetable broth
  • 1 cup chopped vegetables (carrots, peas, bell peppers)
  • 1 cup shredded cheese
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine millet, vegetable broth, chopped vegetables, salt, and pepper.
  • Transfer the mixture to a baking dish and cover with foil.
  • Bake for 30 minutes, then remove the foil and sprinkle shredded cheese on top.
  • Bake for an additional 15 minutes, or until the cheese is melted and golden brown.
  • Let it cool for a few minutes before serving.

This casserole can be customized with your favorite vegetables and cheese.
