Ingredients:

  • 1 lb Ground Beef
  • 1 can Corn drained
  • 1 can Black Beans drained and rinsed
  • 1 can Rotel Tomatoes
  • 1 package Taco Seasoning
  • 2 cups Shredded Cheddar Cheese
  • 1 bag Tortilla Chips crushed

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning, corn, black beans, and Rotel tomatoes to the skillet. Stir to combine and cook for another 5 minutes.
  • In a baking dish, layer half of the crushed tortilla chips, followed by the beef mixture, and then half of the shredded cheese. Repeat the layers, ending with the remaining cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for a quick weeknight dinner. You can also customize it by adding your favorite toppings like sour cream, jalapeños, or avocado.
