Ingredients:

  • 2 cups Polenta
  • 4 cups Water
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Salsa
  • 1 cup Cheddar Cheese shredded

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, bring water to a boil. Gradually whisk in polenta. Reduce heat to low and cook, stirring frequently, until thickened, about 15 minutes.
  • Spread the cooked polenta evenly in a greased baking dish.
  • In a mixing bowl, combine black beans, corn, and salsa. Spread this mixture over the polenta.
  • Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be customized with your favorite toppings like avocado, sour cream, or jalapeños.
