Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
Stir in the diced tomatoes, frozen corn, salt, and black pepper. Simmer for 5 minutes.
In a baking dish, layer half of the cooked rice, then half of the beef mixture, and sprinkle with half of the shredded cheese. Repeat the layers.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add more vegetables or spices to suit your taste.
