Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Chopped Onion
  • 1 cup Chopped Bell Pepper
  • 2 cloves Garlic, minced
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 cup Frozen Corn
  • 2 cups Shredded Cheddar Cheese
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 cup Cooked Rice

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the chopped onion, bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
  • Stir in the diced tomatoes, frozen corn, salt, and black pepper. Simmer for 5 minutes.
  • In a baking dish, layer half of the cooked rice, then half of the beef mixture, and sprinkle with half of the shredded cheese. Repeat the layers.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add more vegetables or spices to suit your taste.
