Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 2 cups Shredded Cheddar Cheese
  • 1 bag Frito Lay Chips
  • 1 cup Sour Cream

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning to the beef and cook according to package instructions.
  • In a large mixing bowl, combine cooked beef, black beans, corn, and 1 cup of shredded cheese.
  • Spread a layer of Frito Lay chips in the bottom of a baking dish.
  • Pour the beef mixture over the chips and spread evenly.
  • Top with remaining cheese and another layer of Frito Lay chips.
  • Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Serve with sour cream on the side.

Notes:

Feel free to add jalapeños or hot sauce for extra spice!
