Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning to the beef and cook according to package instructions.
In a large mixing bowl, combine cooked beef, black beans, corn, and 1 cup of shredded cheese.
Spread a layer of Frito Lay chips in the bottom of a baking dish.
Pour the beef mixture over the chips and spread evenly.
Top with remaining cheese and another layer of Frito Lay chips.
Bake in the preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Serve with sour cream on the side.
Notes:
Feel free to add jalapeños or hot sauce for extra spice!
