15 oz, drained and rinsed

Sour cream

Salt and pepper
Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion, garlic powder, cumin, chili powder, salt, and pepper to the beef. Cook until onions are soft.
In a baking dish, layer half of the tortillas, followed by half of the beef mixture, black beans, enchilada sauce, and shredded cheese.
Repeat the layers with the remaining ingredients.
Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes or until cheese is bubbly.
Let it cool for a few minutes, then serve with sour cream.
Notes:
Feel free to add more veggies like bell peppers or corn for extra flavor.
