Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Enchilada sauce 15 oz
  • 1 cup Shredded cheese Mexican blend
  • 12 pieces Corn tortillas
  • 1 can Black beans 15 oz, drained and rinsed
  • 1 cup Sour cream
  • 1 medium Onion chopped
  • 1 tsp Garlic powder
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • to taste Salt and pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion, garlic powder, cumin, chili powder, salt, and pepper to the beef. Cook until onions are soft.
  • In a baking dish, layer half of the tortillas, followed by half of the beef mixture, black beans, enchilada sauce, and shredded cheese.
  • Repeat the layers with the remaining ingredients.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes or until cheese is bubbly.
  • Let it cool for a few minutes, then serve with sour cream.

Notes:

Feel free to add more veggies like bell peppers or corn for extra flavor.
