Ingredients:  

Main Ingredients

  • 2 cups shredded cheese cheddar or a mix
  • 1 cup chopped onions
  • 1 can enchilada sauce about 10 oz
  • 12 pieces corn tortillas
  • 1 tbsp olive oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add chopped onions and sauté until soft.
  • In a mixing bowl, combine the sautéed onions with 1.5 cups of shredded cheese.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Fill each tortilla with the cheese and onion mixture, roll them up, and place them seam-side down in the baking dish.
  • Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add other ingredients like bell peppers or jalapeños for extra flavor.
