Ingredients:

  • 4 cups potatoes, peeled and cubed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup (10.5 ounces)
  • 1 cup onion, finely chopped
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine potatoes, cheddar cheese, sour cream, cream of chicken soup, onion, salt, and pepper.
  • Transfer the mixture to a greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and the casserole is bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add some cooked bacon bits for extra flavor.
