Ingredients:  

Main Ingredients

  • 1 large butternut squash peeled and cubed
  • 2 cups kale chopped
  • 1 cup shredded cheese your choice
  • 1 cup milk
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, toss the butternut squash with olive oil, salt, and pepper.
  • Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  • In a baking dish, combine the roasted squash, chopped kale, shredded cheese, and milk.
  • Bake for another 15-20 minutes until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add other veggies or spices to suit your taste.
