Ingredients:  

Main Ingredients

  • 2 cans Butter Beans drained and rinsed
  • 1 cup Chopped Tomatoes
  • 1 cup Vegetable Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, sauté the chopped onion and minced garlic until softened.
  • Add the chopped tomatoes, vegetable broth, thyme, and paprika. Stir well.
  • Add the butter beans to the skillet and mix everything together. Season with salt and pepper to taste.
  • Transfer the mixture to a casserole dish and bake in the preheated oven for 30-35 minutes, until bubbly and heated through.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is great served with crusty bread or a side salad.
