Ingredients:

  • 2 cups Zucchini, sliced
  • 2 cups Spinach, chopped
  • 1 cup Feta cheese, crumbled
  • 1 cup Milk
  • 4 Eggs beaten
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the zucchini, spinach, and feta cheese.
  • In another bowl, whisk together the milk, beaten eggs, salt, and pepper.
  • Pour the egg mixture over the vegetables and cheese, and mix well.
  • Transfer the mixture to a greased baking dish.
  • Bake for 45 minutes, or until the top is golden and the casserole is set.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be served warm or at room temperature. It's great for meal prep and can be stored in the fridge for up to 3 days.
