Ingredients:

  • 3 medium zucchini sliced
  • 1 cup Parmesan cheese grated
  • 1 cup bread crumbs
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine the sliced zucchini, olive oil, salt, and pepper.
  • Layer the zucchini slices in a baking dish.
  • Sprinkle the grated Parmesan cheese and bread crumbs evenly over the zucchini.
  • Bake in the preheated oven for 25-30 minutes, until the top is golden brown and crispy.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add some garlic powder or Italian seasoning for extra flavor.
