Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Black beans drained and rinsed
  • 1 cup Salsa
  • 2 cups Shredded cheese Mexican blend
  • 8 pieces Tostada shells crushed
  • 1 cup Sour cream
  • 1 cup Chopped lettuce
  • 1 cup Diced tomatoes

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the black beans and salsa to the skillet. Stir to combine and heat through.
  • In a baking dish, layer half of the crushed tostada shells, followed by half of the beef mixture, and half of the shredded cheese. Repeat the layers.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool slightly. Top with sour cream, chopped lettuce, and diced tomatoes before serving.

Notes:

This casserole is great for a quick weeknight dinner. Feel free to customize with your favorite toppings!
