Ingredients:

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Salsa
  • 2 cups Shredded Cheddar Cheese
  • 1 package Cornbread Mix prepared according to package instructions

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • In a mixing bowl, combine the cooked ground beef, black beans, corn, and salsa. Mix well.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Sprinkle the shredded cheddar cheese over the top of the mixture.
  • Prepare the cornbread mix according to the package instructions and spread it evenly over the cheese layer.
  • Bake in the preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  • Let the casserole cool for a few minutes before serving. Enjoy!
