Ingredients:  

Main Ingredients

  • 4 cups sliced squash
  • 1 cup chopped onion
  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup bread crumbs
  • 2 tbsp butter melted
  • to taste salt and pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large pot, boil the squash and onion until tender. Drain well.
  • In a mixing bowl, combine the squash, onion, cream cheese, and cheddar cheese. Mix well.
  • Transfer the mixture to a baking dish.
  • In a small bowl, mix the bread crumbs and melted butter. Sprinkle over the casserole.
  • Bake for 25-30 minutes, or until the top is golden brown.

Notes:

For a spicier version, add some chopped jalapeños.
