Instructions:
Preheat oven to 350°F (175°C).
In a large pot, combine split peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
In a mixing bowl, combine cooked split peas, onion, garlic, carrots, celery, thyme, salt, and black pepper.
Transfer the mixture to a baking dish and bake for 25 minutes.
Remove from oven and let cool for a few minutes before serving.
Notes:
Feel free to add more vegetables or spices to suit your taste.
