Ingredients:  

Main Ingredients

  • 1 cup split peas
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large pot, combine split peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • In a mixing bowl, combine cooked split peas, onion, garlic, carrots, celery, thyme, salt, and black pepper.
  • Transfer the mixture to a baking dish and bake for 25 minutes.
  • Remove from oven and let cool for a few minutes before serving.

Notes:

Feel free to add more vegetables or spices to suit your taste.
