Instructions:
Preheat your oven to 350°F (175°C).
Cook the elbow macaroni according to package instructions. Drain and set aside.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Gradually whisk in the milk, and cook until the mixture thickens and bubbles.
Remove from heat and stir in 1.5 cups of shredded cheddar cheese until melted. Season with salt and pepper to taste.
In a large mixing bowl, combine the cooked macaroni, cheese sauce, and diced Spam. Mix well.
Transfer the mixture to a baking dish. Sprinkle the remaining 0.5 cup of shredded cheddar cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
Let it cool for a few minutes before serving. Enjoy!
