Instructions:
Preheat your oven to 350°F (175°C).
Cook the rice according to package instructions.
In a mixing bowl, combine the cooked rice, Rotel tomatoes, shredded cheese, cooked chicken, chicken broth, olive oil, salt, and black pepper.
Transfer the mixture to a baking dish and spread it out evenly.
Bake in the preheated oven for 30 minutes, or until the top is golden and bubbly.
Let it cool for a few minutes before serving.
Notes:
You can add more vegetables like bell peppers or corn for extra flavor.
