Ingredients:  

Main Ingredients

  • 1 cup uncooked rice
  • 1 can Rotel tomatoes undrained
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup cooked chicken diced
  • 1 cup chicken broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the rice according to package instructions.
  • In a mixing bowl, combine the cooked rice, Rotel tomatoes, shredded cheese, cooked chicken, chicken broth, olive oil, salt, and black pepper.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake in the preheated oven for 30 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

You can add more vegetables like bell peppers or corn for extra flavor.
