Ingredients:  

Main Ingredients

  • 500 g Pork Shoulder cut into chunks
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 cups Chicken Broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 0.5 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Heat olive oil in a large skillet over medium heat. Add pork and brown on all sides.
  • Remove pork and set aside. In the same skillet, add onions and garlic, and cook until softened.
  • Return pork to the skillet. Add chicken broth, carrots, celery, salt, pepper, thyme, and rosemary. Bring to a simmer.
  • Transfer everything to a casserole dish. Cover and bake in the preheated oven for 1.5 hours, or until pork is tender.
  • Serve hot and enjoy!

Notes:

This pork casserole is a great make-ahead meal. It tastes even better the next day!
