Instructions:
Preheat your oven to 350°F (175°C).
Heat olive oil in a large skillet over medium heat. Add pork and brown on all sides.
Remove pork and set aside. In the same skillet, add onions and garlic, and cook until softened.
Return pork to the skillet. Add chicken broth, carrots, celery, salt, pepper, thyme, and rosemary. Bring to a simmer.
Transfer everything to a casserole dish. Cover and bake in the preheated oven for 1.5 hours, or until pork is tender.
Serve hot and enjoy!
Notes:
This pork casserole is a great make-ahead meal. It tastes even better the next day!
