Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine quinoa and vegetable broth. Let it sit for 5 minutes.
Add chopped zucchini, red bell pepper, cherry tomatoes, and Kalamata olives to the bowl. Mix well.
Stir in dried oregano and basil. Season with salt and pepper to taste.
Transfer the mixture to a baking dish. Cover with foil and bake for 30 minutes.
Remove the foil, sprinkle crumbled feta cheese on top, and bake for another 15 minutes or until the cheese is golden and bubbly.
Let it cool for a few minutes before serving. Enjoy!

This casserole is perfect for meal prep and can be stored in the fridge for up to 4 days.
