Ingredients:  

Main Ingredients

  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 Zucchini chopped
  • 1 Red Bell Pepper chopped
  • 1 cup Cherry Tomatoes halved
  • 1 cup Kalamata Olives pitted and sliced
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 cup Feta Cheese crumbled

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine quinoa and vegetable broth. Let it sit for 5 minutes.
  • Add chopped zucchini, red bell pepper, cherry tomatoes, and Kalamata olives to the bowl. Mix well.
  • Stir in dried oregano and basil. Season with salt and pepper to taste.
  • Transfer the mixture to a baking dish. Cover with foil and bake for 30 minutes.
  • Remove the foil, sprinkle crumbled feta cheese on top, and bake for another 15 minutes or until the cheese is golden and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for meal prep and can be stored in the fridge for up to 4 days.
