Ingredients:  

Main Ingredients

  • 500 g Lamb shoulder, diced
  • 2 Carrots, chopped
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 400 ml Beef stock
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 160°C (320°F).
  • In a large casserole dish, brown the lamb over medium heat.
  • Add the chopped carrots, onion, and garlic. Cook until softened.
  • Stir in the tomato paste, thyme, and rosemary.
  • Pour in the beef stock, season with salt and pepper, and bring to a simmer.
  • Cover the dish and transfer to the oven. Cook for 2 hours or until the lamb is tender.
  • Serve hot with your choice of sides.

Notes:

This lamb casserole is perfect for a cozy family dinner. Feel free to add more vegetables like potatoes or peas.
