Instructions:
Preheat your oven to 160°C (320°F).
In a large casserole dish, brown the lamb over medium heat.
Add the chopped carrots, onion, and garlic. Cook until softened.
Stir in the tomato paste, thyme, and rosemary.
Pour in the beef stock, season with salt and pepper, and bring to a simmer.
Cover the dish and transfer to the oven. Cook for 2 hours or until the lamb is tender.
Serve hot with your choice of sides.
