Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine cooked rice, diced chicken, mixed vegetables, soy sauce, sesame oil, salt, and pepper. Mix well.
Transfer the mixture to a baking dish and spread evenly.
Sprinkle shredded cheese on top.
Bake in the preheated oven for 40 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
