Instructions:
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onions and sliced carrots to the skillet. Cook until the vegetables are tender.
Stir in the peas and cook for an additional 2-3 minutes.
Transfer the mixture to a casserole dish. Spread the mashed potatoes evenly over the top.
Sprinkle the shredded cheddar cheese over the mashed potatoes.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like corn or green beans.
