Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
3. Add the minced garlic and cook for another minute.
4. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.
5. Stir in the frozen peas and carrots, salt, and black pepper. Cook for another 5 minutes.
6. Transfer the turkey mixture to a baking dish. Spread the mashed potatoes evenly over the top.
7. Sprinkle the shredded cheddar cheese over the mashed potatoes.
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
9. Let the casserole cool for a few minutes before serving.
