Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 cup Uncooked rice
  • 1 can Diced tomatoes (14.5 oz)
  • 1 cup Shredded cheddar cheese
  • 1 cup Beef broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent.
  • Stir in the uncooked rice, diced tomatoes (with juice), beef broth, salt, and pepper. Bring to a boil.
  • Transfer the mixture to a baking dish and cover with foil.
  • Bake in the preheated oven for 30 minutes.
  • Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add your favorite veggies like bell peppers or peas for extra flavor and nutrition.
