Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cooked rice, chopped spinach, chopped cilantro, sour cream, shredded cheese, salt, and black pepper. Mix well.
Transfer the mixture to a greased baking dish and spread it out evenly.
Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
This casserole can be made ahead of time and refrigerated until ready to bake. Just add an extra 10 minutes to the baking time if baking from cold.
