Ingredients:  

Main Ingredients

  • 2 cups Cooked Rice
  • 1 cup Chopped Spinach fresh or frozen
  • 1 cup Chopped Cilantro
  • 1 cup Sour Cream
  • 1 cup Shredded Cheese cheddar or Monterey Jack
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked rice, chopped spinach, chopped cilantro, sour cream, shredded cheese, salt, and black pepper. Mix well.
  • Transfer the mixture to a greased baking dish and spread it out evenly.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
  • Remove from the oven and let it cool for a few minutes before serving.

Notes:

This casserole can be made ahead of time and refrigerated until ready to bake. Just add an extra 10 minutes to the baking time if baking from cold.
