Ingredients:

  • 4 cups Frozen Shredded Hash Browns
  • 1 cup Diced Ham
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Diced Green Bell Pepper
  • 1 cup Diced Onion
  • 8 large Eggs
  • 1 cup Milk
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the hash browns, ham, cheese, bell pepper, and onion.
  • In another bowl, whisk together the eggs, milk, salt, and pepper.
  • Pour the egg mixture over the hash brown mixture and stir to combine.
  • Transfer the mixture to a greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the casserole is set and the top is golden brown.
  • Let cool for a few minutes before serving.

Notes:

This casserole can be made ahead of time and refrigerated overnight. Just bake it in the morning for a quick and easy breakfast.
