Instructions:
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the hash browns, ham, cheese, bell pepper, and onion.
In another bowl, whisk together the eggs, milk, salt, and pepper.
Pour the egg mixture over the hash brown mixture and stir to combine.
Transfer the mixture to a greased baking dish.
Bake in the preheated oven for 45 minutes, or until the casserole is set and the top is golden brown.
Let cool for a few minutes before serving.
Notes:
This casserole can be made ahead of time and refrigerated overnight. Just bake it in the morning for a quick and easy breakfast.
