Ingredients:  

Main Ingredients

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 cup Carrots, sliced
  • 1 cup Peas
  • 1 cup Dairy-free cheese
  • 1 cup Almond milk
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine all the vegetables.
  • Add olive oil, salt, and pepper to the vegetables and mix well.
  • Transfer the vegetable mixture to a baking dish.
  • Pour almond milk over the vegetables and top with dairy-free cheese.
  • Bake for 40 minutes or until the vegetables are tender and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

You can use any combination of vegetables you like.
