Ingredients:

  • 1 lb Andouille sausage sliced
  • 1 cup Onion chopped
  • 1 cup Bell pepper chopped
  • 2 cloves Garlic minced
  • 1 cup Rice uncooked
  • 2 cups Chicken broth
  • 1 can Diced tomatoes 14.5 oz
  • 1 tsp Cajun seasoning
  • 1 cup Cheddar cheese shredded

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook the sliced Andouille sausage over medium heat until browned. Remove and set aside.
  • In the same skillet, sauté the chopped onion and bell pepper until softened. Add minced garlic and cook for another minute.
  • In a baking dish, combine the cooked sausage, sautéed vegetables, uncooked rice, chicken broth, diced tomatoes, and Cajun seasoning. Mix well.
  • Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  • Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  • Let the casserole sit for a few minutes before serving. Enjoy!

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
