Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook the sliced Andouille sausage over medium heat until browned. Remove and set aside.
In the same skillet, sauté the chopped onion and bell pepper until softened. Add minced garlic and cook for another minute.
In a baking dish, combine the cooked sausage, sautéed vegetables, uncooked rice, chicken broth, diced tomatoes, and Cajun seasoning. Mix well.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil, sprinkle shredded cheddar cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
Let the casserole sit for a few minutes before serving. Enjoy!
