Ingredients:  

Main Ingredients

  • 2 medium Zucchini sliced
  • 2 medium Yellow Squash sliced
  • 4 medium Tomatoes sliced
  • 1 cup Shredded Mozzarella Cheese
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Olive Oil

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Grease a baking dish with olive oil.
  • Layer the sliced zucchini, squash, and tomatoes in the dish.
  • Sprinkle salt, pepper, and shredded mozzarella cheese on top.
  • Bake for 30 minutes or until the vegetables are tender and the cheese is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is a great way to use up summer vegetables.
