Ingredients:

  • 1 lb Ground beef
  • 2 cups Elbow macaroni uncooked
  • 1 lb Velveeta cheese cubed
  • 1 can Diced tomatoes drained
  • 1 cup Shredded cheddar cheese
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the Velveeta cheese to the skillet with the ground beef and stir until melted.
  • Stir in the diced tomatoes, salt, and black pepper. Mix well.
  • Combine the cooked macaroni with the beef and cheese mixture. Stir until well combined.
  • Transfer the mixture to a baking dish and top with shredded cheddar cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be prepared ahead of time and baked just before serving.
