Instructions:
Preheat your oven to 350°F (175°C).
Cook the macaroni according to package instructions. Drain and set aside.
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the Velveeta cheese to the skillet with the ground beef and stir until melted.
Stir in the diced tomatoes, salt, and black pepper. Mix well.
Combine the cooked macaroni with the beef and cheese mixture. Stir until well combined.
Transfer the mixture to a baking dish and top with shredded cheddar cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Let cool for a few minutes before serving. Enjoy!
