400g, drained and rinsed

Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Stir in the minced garlic, carrots, and celery. Cook for another 5 minutes.
4. Add the chopped red and yellow bell peppers and cook for 3 minutes.
5. Stir in the sliced vegan sausages and cook for 5 minutes.
6. Pour in the chopped tomatoes, cannellini beans, and vegetable stock.
7. Add the smoked paprika, dried thyme, salt, and pepper. Stir well.
8. Bring to a boil, then reduce heat and simmer for 30 minutes.
9. Garnish with fresh parsley before serving.
