Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 sticks celery sliced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 6 vegan sausages sliced
  • 1 can chopped tomatoes 400g
  • 1 can cannellini beans 400g, drained and rinsed
  • 2 cups vegetable stock
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and cook until softened, about 5 minutes.
  • 3. Stir in the minced garlic, carrots, and celery. Cook for another 5 minutes.
  • 4. Add the chopped red and yellow bell peppers and cook for 3 minutes.
  • 5. Stir in the sliced vegan sausages and cook for 5 minutes.
  • 6. Pour in the chopped tomatoes, cannellini beans, and vegetable stock.
  • 7. Add the smoked paprika, dried thyme, salt, and pepper. Stir well.
  • 8. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 9. Garnish with fresh parsley before serving.
