Ingredients:

  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 2 cups Shredded Cheddar Cheese
  • 1 bag Tater Tots

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir to combine.
  • In a baking dish, layer the beef mixture, black beans, corn, and 1 cup of shredded cheese.
  • Top with an even layer of tater tots.
  • Bake in the preheated oven for 30 minutes, then sprinkle the remaining cheese on top and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add your favorite toppings like sour cream, salsa, or jalapeños.
