Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 cup Onion, chopped
  • 1 can Corn, drained
  • 1 can Black Beans, drained and rinsed
  • 1 can Diced Tomatoes
  • 1 cup Shredded Cheddar Cheese
  • 1 package Cornbread Mix
  • 1 cup Milk
  • 1 large Egg
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef and onion over medium heat until beef is browned and onion is tender. Drain excess fat.
  • Add corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and cook for 5 minutes.
  • Transfer the mixture to a baking dish and spread evenly.
  • In a bowl, prepare cornbread mix according to package instructions, using milk and egg. Pour over the beef mixture in the baking dish.
  • Sprinkle shredded cheddar cheese on top.
  • Bake in preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add jalapeños for a spicy kick!
