Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef and onion over medium heat until beef is browned and onion is tender. Drain excess fat.
Add corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and cook for 5 minutes.
Transfer the mixture to a baking dish and spread evenly.
In a bowl, prepare cornbread mix according to package instructions, using milk and egg. Pour over the beef mixture in the baking dish.
Sprinkle shredded cheddar cheese on top.
Bake in preheated oven for 25-30 minutes, or until the cornbread is golden brown and cooked through.
Let cool for a few minutes before serving.
Notes:
Feel free to add jalapeños for a spicy kick!
