South of the Border Casserole Recipe

Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 cup salsa
  • 1 cup shredded cheese Mexican blend
  • 1 packet taco seasoning
  • 1 cup sour cream

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the taco seasoning to the beef and stir to combine.
  • In a large mixing bowl, combine the cooked beef, black beans, corn, and salsa.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Spread the sour cream over the top of the mixture.
  • Sprinkle the shredded cheese evenly over the top.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add any additional toppings like chopped cilantro, diced tomatoes, or sliced jalapeños.
