Season the pork chops with salt and pepper. In a skillet, brown the pork chops on both sides. Remove and set aside.
In the same skillet, melt the butter and sauté the onions until translucent. Stir in the flour and cook for a minute.
Gradually add the milk, stirring constantly until the mixture thickens. Add salt and pepper to taste.
In a baking dish, layer half of the sliced potatoes, pour half of the sauce over them, and sprinkle with half of the cheese. Repeat with the remaining potatoes, sauce, and cheese.
Place the browned pork chops on top of the potatoes. Cover the dish with aluminum foil.
Bake in the preheated oven for about 1 hour, or until the potatoes are tender and the pork chops are cooked through.
Remove the foil and bake for an additional 10 minutes to brown the top. Let it rest for a few minutes before serving.
