Ingredients:  

Main Ingredients

  • 1 lb Ground Turkey
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or canned
  • 1 cup Salsa
  • 1 cup Low-Fat Cheddar Cheese shredded
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground turkey over medium heat until browned.
  • In a mixing bowl, combine cooked turkey, black beans, corn, salsa, cumin, chili powder, garlic powder, and onion powder. Mix well.
  • Transfer mixture to a baking dish. Top with shredded cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

This casserole is perfect for a healthy weeknight dinner. Serve with a side salad for a complete meal.
