Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine shrimp, mixed vegetables, cream of mushroom soup, and shredded cheese. Season with salt and pepper.
Transfer the mixture to a baking dish and spread evenly.
In a small bowl, mix bread crumbs with olive oil. Sprinkle over the casserole.
Bake in the preheated oven for 40 minutes, or until the top is golden and the casserole is bubbly.
Let it cool for a few minutes before serving.
Notes:
This casserole is great for using up leftover vegetables. Feel free to substitute with what you have on hand.
