Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 cups Mixed vegetables (carrots, peas, corn)
  • 1 cup Shredded cheese
  • 1 can Cream of mushroom soup
  • 1 cup Bread crumbs
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine shrimp, mixed vegetables, cream of mushroom soup, and shredded cheese. Season with salt and pepper.
  • Transfer the mixture to a baking dish and spread evenly.
  • In a small bowl, mix bread crumbs with olive oil. Sprinkle over the casserole.
  • Bake in the preheated oven for 40 minutes, or until the top is golden and the casserole is bubbly.
  • Let it cool for a few minutes before serving.

Notes:

This casserole is great for using up leftover vegetables. Feel free to substitute with what you have on hand.
